Shortly after I was diagnosed with diabetes I had a meltdown. What the hell was I going to eat? I spent entirely too many months eating prepackaged frozen meals that appeared to fit the carb/protein/fat ratio. Truth is, they're expensive and boring.
Then I spent several more months eating grilled chicken, a piece of whole wheat bread and lettuce with a light balsamic dressing. That also got boring.
After a little (OK, a lot) more pouting I started looking for diabetic-friendly recipes. Here are some of my favorites.
